1 cup long grain white rice
2 cups water
2 tablespoons real butter
Juice from 1 large lime
1 (8-ounce) can crushed pineapple, drained
1.2 -3/4 cups chopped cilantro
Kosher Salt and ground pepper to taste
1. In a large saucepan, combine rice and water. Bring to a boil over high heat and then
reduce heat to low, cover tightly and cook for 20 minutes. Remove from heat and allow to stand, covered
for 5 minutes, so rice can absorb more water.
2. After 5 minutes, add the butter and stir to melt. Ad the lime juice, pineapple, and
cilantro. Stir to combine, and then add
salt and pepper to taste. Serve
immediately.
