Carrot Cake


This is the best carrot cake I've ever had. This recipe also comes from Jenn Seda.

Carrot Cake

3 layers
3 greased 9" round pans

1 1/2 C sugar
1 1/2 C canola oil
4 eggs
2 C flour
2 tsp cinnamon
2 tsp baking powder
2 tsp baking soda
3 C grated carrots
1 C raisins

Bake at 300 degrees for 35 minutes. For cupcakes, bake at 350 for 20 minutes.

Frosting

1 box powdered sugar
2 tsp vanilla
4 Tb butter
8 oz low fat (why bother with the low fat at this point???) cream cheese
